Spinach and Lettuce Salad

Ingredients:
Romaine lettuce
Ready washed Spinach leaves
Any colour peppers
Red onion
Avocado - optional
Chow mein noodles - optional

Dressing:
1/3 cup red wine vinegar
1/2 cup olive oil
1/4 sugar
1/4 ketchup

Mix all dressing ingredients in an air tight container. Refrigerate.

To prepare salad:
Leave spinach leaves whole. Cut up romaine lettuce, peppers and onion. If you are using avocado only add it just before serving.
If preparing in advance cover well with cling film and refrigerate.

Toss some dressing on salad just before serving.

Note: dressing makes a lot and is quite strong so salad does not need much of it. Rather start off with a little and add more if necessary. (Can keep the dressing in an air tight container in the fridge for a couple of weeks).
