Opening a blog is way easier then opening a deli! "Fish for a man, you feed him for a meal, teach him how to fish and you feed him for life". So, I plan to give you the culinary skills I am blessed to have and you will have to cook for yourself! Many recipes are made up over the years, I also have recipes that friends have passed on and will share them with you because I have tried them and they work!

Borekas - Potato and Mushroom
Buy ready rolled puff pastry (also comes in a roll). Defrost.
Potato Filling:
Peel and cut up potatoes and put in a pot. Season with salt and bring to a boil
Once boiling, lower flame and cook for 20-30 minutes. To check when they are ready use a knife or a fork and poke potato. If they are ready, it should be very easy to poke and they will feel very soft.
When they are ready, remove from fire and partially drain making sure to leave some of the water at the bottom of the pot. Mash.
Completely optional is to add fried onions to the mashed potato. This gives the potato a really nice taste so I think its worth the bother.
If you are going to add fried onions, prepare these whilst potatoes are cooking.
Dice regular and red onions and put in a frying pan. Pour some oil over the onions and a sprinkle of salt (speeds up frying process).
Fry for roughly 20 minutes mixing occasionally. When done, the onions should look like this:
Mix in to mashed potato. Cover potatoes well otherwise they will dry out and set aside to cool.
Mushroom Filling:
If you are frying onions to add to mashed potatoes, you can leave a few in the pan for the mushrooms, add chopped mushrooms and minced fresh garlic and fry on a medium flame.
Cook for a few minutes. Season with salt and pepper. As the mushrooms cook, they will make their own juice - they should look like this:
Once cooked, turn flame to low.
Pour a bit of flour in a clean bowl and add some cold water.
Mix well until the mixture is smooth and looks like milk.
Add to mushroom mixture on fire and mix well. Turn flame up to medium and keep on mixing. It will start off more runny and will thicken up. If its too thick, add some more water.
Turn off fire and set aside to cool.
To make Borekas:
Take a sheet of puff pastry
To make triangle borekas:
If you have a square piece of puff pastry, cut into four pieces.
Put some filling in the middle of each square:
Fold each square from one corner to its opposite corner to make a triangle. Make sure all sides are sealed.
If you want to do interesting shapes - e.g. a heart, you need to cut out two hearts - one for the bottom and then another for the top:
With cookie cutters, you can make any shape.

Once rolled out and filled, place borekas on a baking tray lined with Bakewell parchment. Brush with raw egg and sprinkle sesame seeds on top.
Bake on 200 in a preheated oven for 20 - 30 minutes.
