Opening a blog is way easier then opening a deli! "Fish for a man, you feed him for a meal, teach him how to fish and you feed him for life". So, I plan to give you the culinary skills I am blessed to have and you will have to cook for yourself! Many recipes are made up over the years, I also have recipes that friends have passed on and will share them with you because I have tried them and they work!

Breaded Chicken
Ingredients:
Raw Chicken
Egg
Unseasoned Cornflake Crumbs
Spices
Oil
Scramble egg in a bowl (I did 4 pieces of chicken with 1 egg).
In another bowl, put the cornflake crumbs (I used 1 cup for 4 pieces chicken - I didn't finish it but you need enough in the bowl to be able to coat the chicken). Add whatever spices you like to the crumbs (I used salt, pepper, garlic powder, onion powder and paprika). Mix well. (Alternatively you can buy ready seasoned cornflake crumbs)
Remove all skin from chicken.
Prepare an oven proof dish by drizzling a bit of oil at the bottom (can use spray oil).
Dip the chicken pieces in the egg first covering all sides.
Then dip the chicken in the cornflake crumbs making sure to cover both sides well. Place bone side down in the dish.
Once you have prepared all the pieces, drizzle oil over the top (again - can use spray oil).
Bake covered on 175 for 1 1/2 - 2 hours.

your recipes are amazing! I find dipping the chicken in flour before the egg keeps it moister and soft!!!
